Not-So-Traditional Ribollita Recipe with Smoked Ham Hocks

It’s already AUGUST!😱

Where has the summer gone? And what’s up with these crazy cool days? 

My favorite season is fast approaching ❤️

I’ve been busy trying my hand at some wonky lacto-fermenting for improved gut health, brewing up some water and milk kefir, and fine-tuning some sourdough skills.💪

The pigs are growing and set-off on new adventures every day (just one perk of enjoying large, grassy pastures and woods), and the lambs are working hard at their crimpy, designer fleeces.

Amongst the chaos of three markets a week, milking cows for some wonderful friends, attempting to keep the children all in one piece (I can’t handle any more injuries or mishaps), very sad-looking window flower boxes (don’t judge me), and a half-painted house (Ben Moore sitting in the can: I haven’t forgotten about you, dear!), 

I have STILL been scrambling around the kitchen, throwing together some great (and not so great 😏) concoctions for you!

On this week’s menu: Not-So-Traditional Ribolliti with a Porky Twist!

Introducing Smoked Ham Hock Ribollita

Cue the “Oohs and Ahhhs”

Ribollita is an Italian soup traditionally made with cannellini beans, kale, cabbage, and thickened with day-old bread (sourdough is perfect!).

However, I don’t like “mush.”🤷🏼‍♀️

So, this version is served with buttered bread on the side to mop up the juices that way. 

I’ve also adapted the recipe  to include stock from an uncured, smoked ham hock. Delicious!

✅Beans are filling and healthy

So what’s not to love?

Absolutely. Stinking. Nothing.

Oh, and it freezes beautifully!
